Nicaragua ranks high amongst the coffee-growing nations of the world. It is also famous for being less acidic than its other Central American counterparts.
From the Perdido farm in Matagalpa, Nicaragua, we are proud to offer this lot of natural-processed green coffee beans. On this farm, the Natural/Dry processing ensures the sugars and mucilage or flesh of the cherry coats latch onto the seeds, which enhances the flavours and makes them taste sweeter. Once the coffee is dry, a machine separates the pulp and skin from the seed.
The result is a sweet and flavourful but mellow coffee bean.
This coffee has a fruity flavour profile with complex notes; This coffee is processed using a natural method, where the coffee cherries are dried with their fruit intact, allowing the beans to absorb some of the fruit's sweetness and flavour.
Moreover, Perdido's location has excellent growing conditions, including fertile soil, optimal altitude, and ample rainfall, which contributes to the quality of the coffee.
Ingrained respect for Mother Nature is one of Perdido's fundamental values.
At both Fincas, they won't cut down their exotic hardwood trees. Instead, the branches are trimmed to allow the much-needed sunshine and the trees to continue to grow. They make most of their organic pesticides and herbicides or use organic supplementation. Their fertilizers are made from a combination of organic byproducts, including the remains of their processed coffee cherries.
The Perdido Coffee company was founded by a Canadian entrepreneur looking for a change and an adventure. He travelled to Nicaragua to explore the geography and fell in love with the people, the culture, and, most importantly, the coffee.
After that first sip, he decided to create what is today the world-class Perdido Coffee.
Their family values are not driven by financial gain but by how they can make this world a better place to live. For them, it starts with love and hard work turned into one Perdido cup at a time.
